Golden Lentil Soup

I don't know where you're reading this from, but there's been a chill in Orange County and I am taking personal offense! Met with weather that was below 70 degrees, there was really nothing to do but make soup. I wanted something that would make me feel good, warm me up inside, and still allow for skinny jeans. ....Also, I had a lot of lentils :)

Lentil Soup with Turmeric and Coconut Milk

Also if we're being real, I just really love turmeric. You know how the Dad in My Big Fat Greek Wedding is obsessed with Windex and thinks it cures all? That's me + turmeric. Bloated? Turmeric. Skin is looking meh? Turmeric. Freezing cold? Turmeric. Bland quinoa? Turmeric. Getting sick? TURMERIC. It has never let me down. Plus it's a gorg, bright yellow which can really brighten up any day.

INGREDS

  • Yellow Onion
  • 4ish stalks of celery
  • 3ish big carrots
  • 1 1/4 C dried Lentils
  • 4 C of broth ((I used bone broth for that extra collagen, but you could go with veggie and make it Vegan))
  • 1 tin of coconut milk
  • Garlic - I went with like 4 cloves but I'm a little psycho when it comes to garlic, you do you
  • Ginger
  • TURMERIC - I used a heaping 2 tablespoons
  • Cumin - just like a few shakes
  • Cilantro ((Unrelated: What is life without cilantro?))
  • Lime

COOKING

  1. Saute your onion, celery, carrots in some coconut oil in a big saucepan
  2. When they're soft, add the garlic and ginger - stir, stir, stir
  3. After a minute, add salt, pepper ((I used cayenne bc I'm spicy like that)) + turmeric + cumin
  4. Add broth, coconut milk + lentils
  5. Bring to a boil, then simmer covered until lentils are soft ((Mine took about 30 minutes))
  6. Serve with a flourish of cilantro + fresh lime

Happy to report it did the trick! I was super warm, never got that uncomfortably full feeling, and skinny jeans slid right on the next day!
