Skinny Egg Salad

If my track record isn't proof enough, I am ALL ABOUT easy recipes. A lot of people assume that since I have this blog and post recipes, I'm a little cheffie chef. I don't really consider myself to be "a good cook", though. I just have a particular way of eating ((I like to eat clean, whole foods, with NO chemicals)), which often means I have to do it myself. But I do NOT like to spend hours in the kitchen. I don't even browse Pinterest for recipes, because I assume most of them will be too much "work"...! So, for a second, I almost felt bad posting this "recipe", because it hardly deserves the title, but then I remembered a lot of you are probs like me... Down to eat clean, not down to work.

SO HERE YA GO... A Skinny Egg Salad Recipe that will be ready in five minutes and tastes BOMB.

INGREDS

  • Hard boiled eggs ((2 is good for one person))
  • Mustard ((I love a whole grain, seedy mustard))
  • Capers
  • Red onion
  • Herbs ((whatever's on hand really - I love parsley and dill))
  • Rice cake or Ezekiel toast

WHAT TO DO

  1. Hard boil the eggs**
  2. Mash everything together.
  3. Slather on your choice of brown rice cake/ezekial toast situation.

If I can do it, you can do it.

**Everyone has their own method for hard boiling eggs. If you're in the market for one, here's mine:

  1. Put eggs in a saucepan that has a lid
  2. Cover with an inch of water
  3. Set on stove and turn to high
  4. When water is boiling like a LOT turn off stove and cover pan for 8 minutes.
  5. Pop 'em in a bowl and stick 'em in the fridge.

I looove to keep a little stash of hard boiled eggs in my fridge ready to go. They pack a little protein punch that will keep hunger at bay, aka prevent you from munching or grazing on something you will regret later. Also, they can be dressed up all kinds of ways so you don't ever get sick of them! ((These babies are another fave "recipe"))

Also, I've been really loving parsley lately. Since I don't eat any cheese and try to limit my salt intake, I really go a little crazy on the herbs + spices when trying to add flavor to things. Parsley gives dishes a really nice "fresh + clean" taste, if that makes sense? BUT ALSO, it's a powerhouse little herb - parsley is full of alkaline compounds

HUH?

A happy bod is one who's pH levels are slightly alkaline. Most "naughty" foods and certainly my arch nemesis, "chemicals", cause your body's pH levels to lean to the acidic side. This is no bueno. Say hi to chronic pain, muscle loss, fatigue, high blood pressure, high risk of cancer, etc. 

Eating clean goes a long way in keeping your pH levels in a good spot, but some foods ((like parsley)) pack a bigger punch.
