Cilantro Power Bowl

I live for cilantro. What a cute little herb, right? For those that are allergic and can't stand the taste, my SINCEREST apologies. Although, I'm allergic to cheese, so I'd say we're even. 

ANYWAY. A few years ago, my roommate and I concocted a "Cilantro Sauce" that we would eat on everything... we'd pour it over fish, mix it into quinoa, and even dip pizza into it. It's light, bright, and FRESH. Recently, I whipped up a little power bowl packed with protein, greens, grains, and... you guessed it... Cilantro Sauce!

CILANTRO SAUCE

Blend this all up in a magic bullet/food processor/blender. Keeps in the fridge for a few days.

  • One bunch of cilantro, chop off all the long stems and keep the leaves
  • 2 garlic cloves, peeled
  • Juice of 1/2 a lemon ((if it's a teeny lemon, I'll use the whole thing))
  • 2 tablespoons of olive oil
  • 2 tablespoons of water
  • Pinch of salt and cayenne pepper ((if you like heat))

Blend it up and taste! I like the consistency to be pretty runny vs thick, but adjust it however you like. It also kinda depends how much juice you get out of the lemon.

POWER BOWL

I try and always make sure my fridge is stocked with my fave veggies and some prepared quinoa ((It's kind of a pain to make on a regular basis?)). So for the power bowl, I threw together some roasted chicken, raw broccoli, and roasted carrots, on a bed of cooked quinoa + arugula and poured the cilantro sauce on top. Use what you got! But here are my deets...

  • Roast chicken breast, chopped up
  • Raw broccoli
  • Roasted carrots
  • 1/3 cup of cooked quinoa
  • Biggg handful of greens
  • Cilantro Sauce

The bowl is packed with protein, grains and veggie goodness. It is basically a bowl of fuel. It will give you energy + keep you full and satisfied. Not to mention it tastes BOMB!
